Effect of monsooning on the lipid profile and carbonyl values in ''Arabica'' and ''Robusta'' coffee beans was determined. Coffee beans undergoing monsooning showed increased moisture content with lowering of the total lipid content. No difference in the content of triacylglycerol was observed between nan-monsooned and monsooned beans. Significant changes in the carbonyl values between non-monsooned and monsooned beans were observed.
